  • 1 box brownie mix (plus required ingredients)
  • 12 Oreo cookies, crushed
  • 1 pint fig ice cream
  • 24 Oreo cookies (for sandwiching)




Instructions:

  1. Preheat your oven to the temperature specified on the brownie mix box. Grease a 9x13 inch baking dish with non-stick spray.

  2. Prepare the brownie mix according to the instructions on the box. Once mixed, stir in the crushed Oreo cookies.

  3. Pour the brownie mixture into the greased baking dish and spread it out evenly.

  4. Bake the brownies in the preheated oven according to the instructions on the box, or until a toothpick inserted in the center comes out clean.

  5. Let the brownies cool completely in the baking dish. Once cooled, use a knife or cookie cutter to cut the brownies into 12 squares.

  6. Take the pint of fig ice cream out of the freezer and let it soften for a few minutes until it is easy to scoop.

  7. Scoop the softened ice cream onto 12 of the whole Oreo cookies, and then top with the remaining 12 Oreo cookies to create 12 ice cream sandwiches.

  8. Place the ice cream sandwiches onto a baking sheet and freeze them for at least 30 minutes.

  9. To assemble the sandwiches, place one brownie square on a plate, and then place an ice cream sandwich on top of the brownie. Top with another brownie square to create the sandwich.

  10. Repeat with the remaining brownie squares and ice cream sandwiches.

  11. Serve immediately, or store the sandwiches in the freezer until ready to serve.
