 Honey Coconut Panna Cotta:

  • 1 cup full-fat coconut milk
  • 1 cup heavy cream
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 envelope (1/4 oz) unflavored gelatin
  • 1/2 cup unsweetened shredded coconut, toasted
  • Fresh fruit, for garnish

Instructions:

  1. In a medium saucepan, combine the coconut milk, heavy cream, honey, and vanilla extract. Whisk until well combined.

  2. Sprinkle the gelatin over the mixture and let it sit for 5 minutes to soften.

  3. Place the saucepan over medium heat and stir constantly until the gelatin dissolves and the mixture is hot but not boiling.

  4. Remove from heat and stir in the toasted shredded coconut.

  5. Pour the mixture into 4-6 ramekins or dessert cups, filling each one about 3/4 of the way full.

  6. Cover the ramekins with plastic wrap and refrigerate for at least 4 hours, or until the panna cotta is set.

  7. To serve, run a knife around the edge of each ramekin and gently invert onto a serving plate. If needed, dip the ramekin in warm water for a few seconds to loosen the panna cotta.

  8. Garnish with fresh fruit and additional toasted coconut, if desired. Serve chilled.
