Brownie ice cream sandwich’s

  • 1 box of brownie mix (plus the ingredients needed to make it, such as eggs, oil, and water)
  • 1 quart of ice cream of your choice (such as vanilla, chocolate, or mint chocolate chip)
  • 1/2 cup of all-purpose flour (for dusting)
  • Parchment paper

Instructions:

  1. Preheat the oven to 350°F.

  2. Make the brownie mix according to the package instructions. Pour the batter into a greased 9x13 inch baking dish and smooth it out with a spatula.

  3. Bake the brownies for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely in the pan.

  4. While the brownies are cooling, take the ice cream out of the freezer and let it soften for about 10-15 minutes, or until it's easy to scoop.

  5. Once the brownies are cool, remove them from the pan by pulling up on the edges of the parchment paper. Place the brownies on a cutting board or a clean surface.

  6. Use a sharp knife to cut the brownies into 30 rectangles, each about 2 1/2 inches long and 3 inches wide.

  7. Scoop about 1/4 cup of ice cream onto the bottom side of half of the brownie rectangles. Use a spoon or a spatula to spread the ice cream into an even layer.

  8. Place the remaining brownie rectangles on top of the ice cream, bottom-side down, to make sandwiches.

  9. Wrap each sandwich tightly in plastic wrap and place them on a baking sheet or a large plate. Freeze the sandwiches for at least 1 hour, or until they're firm.

  10. When you're ready to serve the Brownie Ice Cream Sandwiches, remove them from the freezer and let them sit at room temperature for a few minutes to soften slightly.

  11. Dust the sandwiches with flour to prevent them from sticking together. Use a sharp knife to trim the edges if necessary.

  12. Serve the Brownie Ice Cream Sandwiches immediately and enjoy!

Note: You can also customize this recipe by using different flavors of ice cream or by adding toppings such as sprinkles or crushed cookies to the ice cream before making the sandwiches.
